Baked Stuffed Haddock Fillets Recipe

1. Fresh or thawed haddock fillets (1 1/2 to 2pounds)
2. chopped onion (1/4c)
3. soft bread crumbs (2c)
4. chopped freshly parsley (2tbsp)
5. bacon, divided (4 to 5 strips)
6. salt (to taste)
7. pepper (to taste)
Method of preparation:-
1. Take haddock fillets, cut them into serving size pieces. Dice 2 strips of bacon, cook them until get crispy.
2. Take out the bacon, cook the onion in the remaining bacon dripping until the onions get soft. Mix the cooked bacon with onion, parsley, breadcrumbs, bacon dripping. Add salt and pepper.
3. Now spread the bread crumbs mixture on half of the haddock pieces. Top with the remaining haddock pieces.
4. Take a shallow baking dish, grease it and place the haddock in the greased dish. Halve remaining 2 or 3 bacon strips and place on fish. Bake it for 40 to 45 minutes at 325 degrees.
