Easy Cod Cakes and Mustard Sauce Recipe

1. Cod fillets (1 1/2lbs)
2. Dijon mustard (4tsp)
3. oil (1/4c)
4. chopped parsley (2tsp)
5. dry bread crumbs (1/2c)
6. eggs (2)
7. mayonnaise (1/2c)
8. lemon juice (1tbsp)
9. salt and pepper (to taste)
Method Of Preparation:-
1. Take a bowl, mix mustard and mayonnaise in it and then keep it aside. Take lemons and squeeze out 1 tablespoon of juice from them. Now take cod fillet, remove bone from it and then cut it into 1 ½ inch pieces.
2. Take food processor, put fish in it and make puree of it until it gets fluffy. Take a bowl, beat eggs in it and then add parsley, bread crumbs and pepper, salt and lemon juice in it. Now add fish in it. Mix it well and make about 8 patties of this mixture.
3. Take a large frying pan, place it over standard heat. Put patties in hot oil and cook them for 3 to 4 minutes from each side until the patties change to golden color. Then drain the patties or cod cakes on paper towels and then serve them hot with mustard sauce.
