Fish Stew Parmesan Recipe

Ingredients
Fish cut into large pieces snapper, cod etc (2lbs), unpeeled red potato chunks and drained (4c), black pepper (to taste), chopped parsley (1/2c), minced garlic (1clove), thyme (1tsp), brandy (1/4c), grated parmesan cheese (1/2c), dry white wine (1c), stewed tomatoes (1can), chopped celery (1c), chopped green pepper (1/2chopped onion (2c), olive oil (1/4c).

Method Of Preparation:-
Take a frying pan, heat 2 tablespoon of oil in it. Sear the fish in the hot oil. Take out the fish from the frying pan and keep it aside. Add the remaining oil in the pan, cook onion, green pepper and celery in it until get tender. Put the fish again in the pan and mix it with tomatoes, cheese, brandy, thyme, wine, garlic and pepper. Cover the pan and keep it to simmer for about 8 to 10 minutes or until the fish gets flake easily with fork. Mix parsley in it. Now divide the potatoes among 6 soup bowls and top with stew. Sprinkle over the grated parmesan cheese. You can add a can of chopped clams and some zucchini to the pot while simmering. Garnish it with steamed clams, shrimps.
