White Rice With Chili Strips, Corn and Cheese Recipe

Long grain rice (2c), olive oil (2tsp), chicken broth (2c), shredded mozzarella cheese or Chihuahua cheese (1c), peeled and minced onion (1small), chopped cilantro leaves (1large bunch), roasted poblano or jalapeno Chile (1 cut into strips).
Method Of Preparation:-
Take a sauce pan, place it over medium heat. Heat the olive oil in it. Add garlic and onion in the pan and saute them for about 1 or 2 minutes. Add rice in the pan and cook them. Now add chicken broth, corn and cilantro in the pan. Cover the pan and keep it to simmer for about 10 minutes without stirring. If the mixture gets dry then add some broth. When the rice gets fluffy then the dish gets ready. Mix the pepper strips and cheese in the rice 10 minutes before serving.
