Autumn Chicken Stew Dumplings Recipe

1. Boneless, skinless chicken breasts (about 1 1/4lb cut it into 1 inch pieces)
2. chicken broth (3/4c from 32-oz carton)
3. Progresso chicken (1c)
4. Italian style stewed tomatoes undrained (1can about 14.5 oz)
5. chopped onion (1med. About 1/2c)
6. potatoes, cut into 1-inch cubes (2med.)
7. pumpkin pie spice (1tsp)
8. Hubbard squash (1/2)
9. vegetable oil (1tbsp)
10. original bisquick mix (1/4c)
11. chopped fresh parsley or pumpkin pie spice (if desired)
For Dumplings:-
1. Original bisquick mix (1 1/2c)
2. milk (1/2c)
Method of preparation:-
1. Take ¼ cup of bisquick in a bowl, add chicken in it and coat it properly.
2. Take Dutch oven of 4 quarter, heat oil in it over medium heat. Cook chicken in it for about 10 to 12 minutes by stirring it irregularly until it turns to pink in color.
3. Mix potatoes, pumpkin pie spice, pumpkin, tomatoes, onion and chicken broth in it. Cover it and keep it to simmer for about 5 minutes by stirring it irregularly.
4. Take a bowl, prepare dumplings by mixing bisquick and milk in it to form soft dough. Then drop the dumplings into the stew mixture.
5. Cook it uncovered for about 10 minutes and then cover it and again cook it for about 10 minutes until the vegetables get soft. Now dust the parsley and pumpkin pie spice.
