Meatballs Soup (Albondigas Soup) Recipe

1. Ground beef (5 ΒΌ oz)
2. coarsely grated turnips (2)
3. coarsely grated carrots (2)
4. finely chopped cabbage (1/2head)
5. chicken broth (2c)
6. finely chopped scallion (1)
7. salt and pepper
8. oil (2tbsp)
9. egg (1)
10. sliced onion (1/2)
Method of preparation:-
1. Take a large pot, place it over heat. Heat oil in it and then saute the vegetables in the hot oil for about 8 to 10 minutes. Stir the vegetables. Now add the chicken broth in the pot and keep it to boil. When it starts boiling then reduce the heat to low and keep it to simmer.
2. Take a bowl, mix meat, egg, salt and pepper in it. Mix well and then make small balls of this mixture. Add these balls of meat into the boiled liquid in the pot. Cook it for about 30 minutes. When the soup gets ready then serve it hot in soup bowl.
