Mint Chicken (Pollo Con Yerbabuena) Recipe

1. Chicken cut into pieces (1)
2. mint leaves (1/2c)
3. sugar (1/4c)
4. grated orange peel (1tbsp)
5. orange juice (1c)
6. vinegar (5tbsp)
7. oil (for frying)
8. salt (to taste)
Method of preparation:-
1. Take mint leaves, finely chop them and keep them soak in the sugar, orange peel gratings and orange juice.
2. Take chicken pieces, wash and dry them. Salt the chicken pieces and then fry them in the oil until they get golden. Drain off the excess oil.
3. Take a pan, boil the vinegar for few seconds in it and then add the orange juice mixture. Pour this sauce over the chicken and keep it to cook until it gets tender. When it gets ready then serve it hot.
