Mojo Chicken With Penne Pasta Recipe

1. Chicken breasts (skinless or boneless) or tenderloins (3 or 4)
2. Mini penne pasta (or your favorite pasta) (1 box)
3. Olive oil (1/3 cup)
4. Cumin (1/2 tsp)
5. Italian parsley chopped (2 tbsp )
6. garlic minced (6 cloves)
7. Shallot minced (1)
8. Salt pinched
9. Lime juice (2/3 cup)
10. black beans rinsed and drained (1 can)
11. black pepper dash cracked.
Method of preparation:-
1. First marinate the chicken for about 2 hours. Take a saucepan, place it over medium heat. Heat oil in it and cook shallot and garlic in it for about 1 minute. Then add cumin, lime juice, salt and pepper in it according to taste. Keep it to boil and then take off the pan from heat and keep it to cool.
2. Take glass container, mix mojo marinade with chicken in it. Keep it in refrigerator for about 2 hours to marinate.
3. Cook pasta in a pot according to instructions on package by adding pinches of salt until pasta gets soft. Wash black beans in colander. Wash, dry and chop parsley.
4. Meanwhile grill chicken until get grilled then keep it to cool. When pasta gets cooked then drain it and pour it into large colander with beans. Now cut the chicken into pieces and put it into the pot.
5. Pour beans and pasta back to the pot with chicken and then mix 1/3 cup of mojo marinade into the pot. Now add parsley in it and sprinkle pepper on top. Add left over mojo marinade in it if you like.
