Santa Fe Chicken Recipe

Ingredients
1. Skinless, boneless chicken breast halves (5 to 6)
2. shredded cheddar cheese (1c)
3. bottled thick and chunky salsa (1c)
4. drained, whole kernel corn (2cans or 15 ounces)
5. rinsed and drained black beans (1can or 15 ounces)

Method of preparation:-

1. Take a slow cooker, mix beans, corn and ½ cup of salsa in it. Add the chicken breasts and then pour the remaining salsa over the chicken breasts.

2. Cover the cooker and cook it on high for 2 ½ to 3 hours or until the chicken gets tender. Do not over cook the chicken or the chicken will get toughen.

3. Sprinkle the cheese on the top, cover the cooker and cook it until the cheese gets melt for about 5 minutes.
