Almond and Coconut Cream Fruit Cake Recipe

For Cake:-
1. Finely ground almonds (3/4c)
2. ground ginger (1tsp)
3. baking powder (1/2tsp)
4. sugar (1/2c)
5. separated eggs (4)
For Cream:-
1. Heavy cream (2/3c)
2. coconut milk (1/4c)
3. low fat cream cheese, softened (4 ounce)
4. zest of (1/2 orange)
5. vanilla (1/2tsp)
6. powdered sugar (3tbsp)
For Fruit:-
1. Blackberries (1/4 pound)
2. strawberries (1/2pound)
3. sugar (1tsp)
4. zest of (1/2 orange)
5. juice of (1orange)
Method of preparation:-
1. First heat the oven to 350 degrees F. Take a bowl, beat egg yolks and sugar in it and then keep it aside. Then beat the egg whites with electric mixer until they form soft peaks.
2. Add almonds, ginger and baking powder in the bowl of egg yolk mixture and then add 1/3 of egg whites in it and mix it. Now add the rest of the whites and mix the mixtures.
3. Take a baking sheet, line it with parchment paper and then floured it. Spread the batter on the sheet. Place the sheet in oven and bake it for about 15 to 20 minutes at 350 degrees F. When the cake gets baked then takes it out from oven and keeps it cool.
4. To prepare filling, take a bowl, mix coconut milk, zest and cream cheese in it until it becomes smooth. Beat cream, sugar and vanilla with an electric mixer until it becomes thick. Then add this whipped cream into the cream cheese mixture and mix it well and keep it in the refrigerator.
5. For Fruit; take a bowl, mix berries, zest, juice and sugar in it and keep the bowl aside for few minutes. Now cut the cake in square pieces and then spread the layer of cream and berries.
