Apricot Pie (Tarte Alsacienne Aux Apricots) Recipe

Ingredients
1. Flour (2 oz)
2. castor sugar (5 oz)
3. fresh apricots (1.5lb)
4. short crust pastry (8 oz)
5. cream (4fl oz)
6. eggs (2)

Method of preparation:-
1. Take a flan dish of 10-inch, line it with short crust pastry. Take apricots, wash and cut them into halves and take out their stones. Place them in circles round the dish touching each other and then dust 1 oz of caster sugar over the apples.

2. Take a bowl, mix flour and the rest of the sugar in it and then beat eggs in it. Now mix cream in it and then pour this custard over the apricots.

3. Place the dish in heated oven and bake it for about 25 to 30 minutes at 425 degrees F. Then take out the pie from oven and keep it to cool and then serve it.
