Baked Custard Pie With Phyllo (Galatopita) Recipe

1. Sheets of phyllo dough (4large)
2. eggs (4)
3. unsalted butter, melted (2/3c)
4. fine semolina (1 1/5c)
5. grated orange peel (2tbsp)
6. sugar (2 1/2c)
7. whole milk (1 1/2quarts)
8. ground cinnamon (optional)
9. sugar (optional)
Method Of Preparation:-
1. First heat the oven to 350 degrees F or 180 degrees C. Take a pot, place it over medium high heat. Mix milk, grated orange peel and sugar in it.
2. Heat the mixture by stirring to prevent the boiling of mixture. When it begins to steam then add 2/3 of the butter, semolina in it and stir it to prevent bubbling. Cook it for about 5 minutes until the custard gets thicken. Now take off the pot from heat and keep it aside to cool.
3. Take eggs, beat them in a bowl and then add into the cooled custard. Beat it until it gets completely blended.
4. Take a baking pan, lightly butter it and then layer the phyllo sheets on it. Butter each sheet with rest of the melted butter. Then pour the custard over the top and trim the extend part of the phyllo.
5. Place the pan in oven and bake it for about 45 minutes at 350 degrees F or 175 degrees C. Bake it until the top gets golden and then keep it to cool and then cut it into pieces and serve. Sprinkle with ground cinnamon and sugar.
Makes about 20 pieces
