Blueberry Cobbler Recipe

For Filling:-
1. Cornstarch (2tbsp)
2. sugar (1/3c)
3. fresh blueberries (6c)
4. grated lemon rind (1tsp)
For Topping:-
1. All purpose flour (1 1/3c)
2. baking soda (1/4tsp)
3. baking powder (1/4tsp)
4. sugar (2tbsp)
5. salt (1/4tsp)
6. sugar (1tsp)
7. 2%reduced-fat milk (3tbsp)
8. fat free sour cream (1c)
9. chilled butter, cut into small pieces (5tbsp)
Method of preparation:-
1. First heat the oven to 350 degrees F. To prepare filling, take a baking dish of 12*7-inch. Mix cornstarch, sugar, blueberries and grated lemon rind in it.
2. To prepare topping, take a large bowl and mix flour, soda, salt, baking powder and 2 tablespoon sugar in it. Beat this mixture and cut in butter with pastry blender until the mixture becomes coarse. Mix sour cream in it to make soft dough.
3. Place spoonful of dough on blueberry filling to form dumplings. Brush the dumplings with milk and then dust 1 teaspoon of sugar over them.
4. Now place the dish on jelly roll pan. Bake it for about 50 minutes at 350 degrees F. Bake the dumplings until the filling gets bubbly and the dumpling changes to lightly brown in color.
