Chilled Apple Soup With Curry (Milosoupa) Recipe

Crab apples, peeled, diced (10small) or tart apples (5med.), juice of (1lemon), curry (1/4tsp preferably hot), yellow onion, diced (1med.), canola oil (2tbsp), pepper (1/4tsp), salt (1/2tsp) and vegetable bouillon (2 1/4c).
Method Of Preparation:-
Take a large saucepan, place it over heat. Heat oil in it and then sauté onions in the oil. Add apple, pepper, salt and curry in it. Cook it, when the apple begins to soften then add vegetable bouillon in it and keep it to simmer for about 40 minutes. Take off the pan from heat and keep it to cool for about 30 minutes. Take a food processor or a blender; add soup and lemon juice in it. Make puree of the soup. Place it in the refrigerator to chill. When the soup gets chilled then serve it with thick Greek yogurt.
Make about 4 bowls of soup
