Chinese Sponge Cake Recipe

Ingredients
1. Sifted cake flour (1c)
2. almond extract (1tsp)
3. sugar (3/4c)
4. cream of tartar (1/2tsp)
5. eggs (5)
6. salt (1/4tsp)
7. baking powder (1tsp)

Method of preparation:-

1. Take a cake pan of 8*8 or 9*9 inches. Line the cake pan with thin or parchment sheet. Prepare a pan for steaming.

2. Take a bowl of medium size, put flour in it and mix salt and baking powder in it and then keep it aside. Take eggs break them and separate the egg yolks and egg whites.

3. Take a bowl of medium size, beat egg whites in it until it gets fluffy. Then add cream of tartar and beat it. Add ¼ cup of sugar in it and beat it. Now add egg yolks and ½ cup of sugar in it. Beat it for about 2 minutes and then mix the almond extract in it.

4. Gently add the flour mixture to the egg mixture and then mix it thoroughly. Now place the batter in the cake pan. Boil the water in a pot over high heat and then turn down the heat to medium, cover the pot and then steam the cake for about 20 to 25 minutes until the knife inserted in the center of it comes out clean.

5. Keep the cake to cool on rack. Invert it on plate and remove the parchment sheet. Now invert the cake on serving plate so that the cake gets the right side up. Now cut it into squares and then serve it.
