Durian Ice Cream Recipe

Ingredients
Egg yolks (2large), Fresh durian (4 to 6 segments) frozen or canned durian as needed to make 4 ounces durian paste, whole cream (1c), light cream (1c), vanilla essence (1tsp), granulated sugar (3tbsp or to taste).

Method Of Preparation:-
Take durian and take out the seeds from it. Mix the flesh to make paste with an electric mixer. Take a sieve and press the paste through it into a bowl. Pace the durian paste in the refrigerator to chill until it is ready to use. Take a bowl of medium size, beat eggs, sugar and vanilla essence in it. Take a pan, add milk and cream in it and keep it to boil. Turn down the heat to low and add the egg mixture in it. Cook it by stirring regularly until it gets thickened. Avoid the mixture to boil otherwise the milk will curdle. Now keep the custard to cool and then keep it to chill for 30 to 35 minutes in the freezer until it gets hardens. Slowly add a tablespoon of durian paste at a time in it. Keep it on freezing by stirring several times or keep it in ice cream maker. When it gets ready then serve it.
