Fresh Fruit Muffins Recipe

Ingredients
1. Chopped fresh fruit (1c)
2. milk (1/2c)
3. margarine, melted (1/2c)
4. egg (1)
5. salt (1/2 tsp about 2ml)
6. baking powder (1 tbsp about 15 ml)
7. skim milk powder (1/3 cup about 75 ml)
8. granulated sugar (1/2 cup about 125 ml)
9. grated lemon jest (1/2 tsp)
10. all purpose flour (2cups about 500ml)
11. lemon juice (1 tsp about 5 ml)

Method of preparation:-

1. Take a large bowl, mix flour, salt, baking powder, skim milk powder and sugar in it.

2. Take another bowl, beat milk, margarine and egg in it until the mixture gets well blended. Mix zest, lemon juice and fruit in it and then add this mixture into the flour mixture. Mix it until it gets blended and for lumpy batter.

3. Take prepared muffin tins, pour the batter into the tins. Place the muffin tins in oven and bake them for about 15 to 20 minutes until they get golden brown color. Now the fresh fruit muffins get ready to serve.
