Grape Must Pudding (Moustalevia) Recipe

Ingredients
Grape Must (5c), crushed walnuts (3/4c), corn flour or cornstarch (3tbsp), semolina (1/2c+1tbsp), sugar (optional) and ground cinnamon.

Method Of Preparation:-
Take a pot, add grape must in it and keep it to boil and the skim of the foam as it rises up to the top. Keep it to boil for 1 minute more and then take off the pot from heat. Cover the pot and keep it aside for overnight to settle. Next day, take a clean pot and transfer the grape must into it very carefully without transferring the sediment that settled to the bottom of the pot. Keep it to boil and add sugar in it to taste and then add semolina a little at a time; stir it with wooden spoon to blend it properly. Take a small bowl, add a little cold water and dissolve corn flour or cornstarch in it. When the grape must starts to thicken then add the corn flour mixture in it. Mix it regularly until it gets thickens to the creamy texture.
