Lemon Blueberry Custard Pie Recipe

Ingredients
1. All purpose flour (2tbsp)
2. white sugar (2/3c)
3. butter (1tbsp)
4. unbaked pie crust (1 about 9 inch)
5. egg whites (2)
6. milk (1c)
7. egg yolks (2)
8. grated lemon zest (1tbsp)
9. lemon juice (3tbsp)
10. fresh blueberries (1 3/4c)

Method of preparation:-
1. First heat the oven to 350 degrees F or 175 degrees C. Take a large bowl, cream butter in it and then mix flour, lemon zest, lemon juice and sugar in it. Mix it well and beat egg yolks and then milk in it.

2. Take a metal or glass mixing bowl, beat egg whites in it until the firm peaks get form. Then pour it slowly into the lemon mixture. Mix it well.

3. Take pie crust and pour the filling into it and the sprinkle the blueberries over the top. Place the pie crust in oven and bake it for about 50 minutes at 350 degrees F until the filling gets set.

4. After 30 minutes of baking, cover the pie with foil to avoid it from browning. Then take it out from oven and keep it to cool and then serve it.
