Lemon Cream Mousse With Champagne Recipe

Ingredients

For Mousse:-
1. Lemon juice (60ml)
2. champagne or sparking wine (75ml)
3. eggs (3)
4. white gelatin (3leaves)
5. cream (120gms)
6. sugar (110gms)
7. raspberries (150gms)

Method of preparation:-
1. Take gelatin and soften it in cold water. Take eggs, break them and then separate the egg yolks and whites.

2. Take a pan; add egg yolks, 60 grams of sugar, lemon juice and champagne in it. Keep this mixture to boil and then take off the pan from heat. Now press the water from the gelatin and mix it into the hot lemon cream mixture and them keep it aside to cool.

3. Take a bowl, beat eggs with third part of the rest of the sugar and then dust the rest of the sugar in parts. Beat the mixture after the addition of each part. Mix it until the mixture becomes firm.

4. Now beat the cream and then add the beaten egg whites into the cream and then add this mixture into the lemon mixture. Take raspberries, wash them and keep a few aside for decoration.

5. Take 4 glasses, divide raspberries in these glasses and then add lemon mousse on the top of raspberries. Keep it to cool for
about 2 hours. Then decorate it with raspberries and serve it.
