Mocha Malt Cupcakes With Peanut Butter Icing Recipe

For Cupcakes:-
1. Semi sweet chocolate roughly chopped (3 ounce)
2. instant coffee powder (1 ½ tbsp)
3. milk (8 ounces)
4. salt, rounded (1/4tsp)
5. baking powder (1 ½ tsp)
6. cake flour (1 ½ tsp)
7. eggs (4)
8. sugar (1 cup)
9. unsalted butter (1/2 tsp)
10. vanilla extract (1 tsp)
11. malt powder (2 tbsp)
12. non stick cooking spray
For Frosting:-
1. Unsalted butter (1/2 stick according to room temp.)
2. creamy peanut butter (3/4 cup)
3. confectioners sugar (3/4 cup)
4. milk (2 tbsp)
5. vanilla extract (1 tsp)
Method of preparation:-
1. First heat the oven to 350 degrees F. Take a cup cake pan, line it with paper and spray it lightly with non stick spray.
2. Take a bowl, mix flour, salt and baking powder in it and then keep it aside. Take a saucepan of medium size, place it over medium heat. Then heat milk, malt powder, instant coffee powder and chocolate in the pan by stirring it regularly. Heat the mixture until the chocolate gets melted and the powder gets dissolved.
3. Take off the pan from heat and add vanilla in it. Take a mixer with paddle attachment, gently beat butter and a cup of sugar in it. Then beat eggs one at a time in it until the mixture gets fluffy.
4. Then add the flour and milk mixture into the butter mixture. Mix it to form batter. Now pour the batter into the cupcake pans, fill them ¾ full. Place pans in oven and bake for 20 to 25 minutes at 350 degrees F until the wooden stick inserted in the center comes out clean.
5. For Frosting; take a mixing bowl, beat butter, peanut butter, sugar and vanilla in it by hand mixer on medium speed until the mixture becomes fluffy and light.
6. Then mix milk in it until the mixture gets good spreading consistency. Now the frosting is ready, spread it over the cooled cup cakes.
