Obsttorte (Fruit Cake) Recipe

Ingredients

For Pastry:-
1. Egg yolks (2)
2. butter (1c)
3. sugar (1/4c)
4. flour (2c)

For Filling:-

1. Cornstarch (2tbsp)
2. water (1/4c if needed)
3. sugar (1/2c if fresh fruit is used)
4. fresh or canned fruit (4c)

Almond coating:-
1. Toasted almonds (1/2c)
2. sugar (1tbsp)
3. egg white (1)

For Frosting:-
1. Cream (1c)
2. vanilla extract (1tsp)
3. sugar (2tbsp)

Method of preparation:-

1. Take a bowl, mix flour and sugar in it. Cut in butter until the mixture looks like coarse crumbs. Then add egg yolks in it to form dough.

2. Take a large pan, place dough in it and press it into the bottom and sides of the pan. The dough should come about 3 cm up the sides of pan.

3. Place the pan in oven and bake it for about 20 to 25 minutes until the pastry becomes hard and changes to light brown in color.

4. To make filling, take canned fruit, drain the fruit and reserve the juice or take fresh fruit juice. Then add sugar to the fresh fruit and keep them aside for half an hour. Drain juice and add water in it to make 1 cup.

5. Take a pan, mix cornstarch and fruit juice in it and then cook it over medium heat until it becomes thickened. Take baked pastry sheet and place whole fruit in it and then pour the juice over the top. Keep it to chill and then remove the cake from the pan. Coat the cake with almonds.

6. Take a small bowl, beat egg whites in it until they get foamy. Then beat sugar in it until stiff peaks get form and spread it around the pastry shell. Press the almonds to cover the sides.

7. To frost the top of the cake, take whipped cream , add sugar and vanilla in it. Mix it and then spread it over the fruit and then decorate it with toasted sliced almonds.
