Orange Marmalade Swiss Roll Recipe

For Swiss roll:-
1. Orange marmalade (1jar)
2. vanilla sugar (1packet)
3. caster sugar (150gms)
4. eggs (5 whites and yolks separated)
5. stronghold flour (120gms)
6. cointreau ou Grand Marnier (5cc)
For Icing:-
1. Hazelnuts, crushed and toasted (80gms)
2. dark chocolate (150gms)
Method of preparation:-
1. First heat the oven to 320 degrees F gas mark 5-6 or 160 degrees C. Take a large salad bowl, add sugar and egg yolks in it. Beat it briskly until it becomes whitish in color and for a ribbon when lifted with spoon. When done, fold in your flour.
2. Take separate bowl, beat egg whites in it until they get stiff and then add egg whites into the egg yolk and sugar mixture. Take a large and flat oven tray, line it with parchment paper. Then spread the Swiss roll mix on it.
3. Place the tray in oven and bake it for about 20 minutes. Then take it out from oven and keep it to cool. When it gets cool then remove the parchment paper. Moisten it with alcohol and then spread marmalade all over it.
4. Then roll it carefully and place it in the refrigerator. Melt the pieces of chocolate in double boiler. Take out the roll from the fridge and coat the roll with melted chocolate.
5. Keep it to cool for a while and then roll it in the crushed hazelnuts. Again place it in the refrigerator for at least 3 hours. Then cut it into slices and serve the rolls.
