Peach Custard Ice Cream With Fresh Peach Compote Recipe

For Ice Cream:- Egg yolks (5 large), half and half (1 c.), whipping cream (1 ½ c.), sugar (3/4 c.), peeled and sliced peaches ( 1 pound), vanilla extract (1/2 tsp.) and corn syrup (1/4 c).
Compote:- Essencia (orange), Muscat wine (1/2 c.), sliced peaches (4 large), fresh lemon juice (2 tsp.) and sugar (1/2 c).
Method Of Preparation:-
Take a medium size saucepan. Put 1 cup of cream, 1/2 cup of sugar and half and half in it. Place it on low heat. Beat egg yolk in small bowl and put it into cream mixture in a sauce pan. Stir the mixture on medium heat until the custard gets thicken for about 5 minutes and then strain this mixture into a bowl. take medium size sauce pan. Put peaches, ¼ cup of sugar and corn syrup in it. Place the pan on medium heat until the peaches get heated properly for about 5 minutes. Now, mash the peaches to form puree. Cook it completely. Put this mixture into custard along with half cup of cream and vanilla. Put this in ice-cream maker to form ice-cream.
For Compote:- Mix al the ingredients like peaches, sugar, Essencia and fresh lemon juice in a bowl. Keep it aside for some time. Toss it occasionally. Serve ice-cream with compote. This recipe can be made up to 3 days ahead. In this recipe thick puree of fresh peaches is added on custard ice-cream.
