Peaches ‘N’ Cream Pepe Salad Recipe

Ingredients
1. Sugar free peach gelatin (1 box)
2. containers light peach yogurt (2 about 2 to 8 oz. each)
3. no sugar added peaches, without draining (1 about 29 oz.)
4. skim non fat milk (1 cup)
5. acini de pepe pasta (1 ½ cup)
6. thawed, light frozen whipped topping (8 oz.)
7. sugar and fat free instant vanilla pudding (1 box)
8. mint sprigs, if desired (for garnish)

Method Of Preparation:-
1. First cook pasta according to the instructions on package until it becomes soft in a pan. Then take off the pan and keep pasta to cool by drain it into a colander. Then rinse it well with cold water and again drain it.

2. Take a large bowl; add milk, dry pudding mix, dry gelatin, juice from the peaches and 2/3 of the whipped topping. Beat all the ingredients to blend and add pasta in it.

3. Take peaches and cut them into bite size pieces and then add into the pieces. Place the bowl in the refrigerator to chill. Take parfait glasses and serve the salad in these glasses. Place a spoonful of rest of the topping. Decorate it with mint sprig and serve it.
