Red Bean Soup Recipe

Ingredients
Azuki beans (1c), brown sugar (1/3-1/2c or as desired), canned lotus seeds (1/4c), dried tangerine peel or fresh orange peel (1strip), water (5c).

Method Of Preparation:-
Take azuki bean and soak them in water for several hours to make them soft and then drain them. Take a saucepan of medium size; add 5 cups of water and tangerine peel in it. Keep it to boil. Now turn down the heat, add lotus seeds and azuki beans in it. Partially cover the pan and then keep it to simmer for about 1 to 1 ½ hours until the beans get soft and start to break apart. Now add brown sugar and mix it until it gets dissolved. Then taste it and add more sugar in it if it is required. When it gets ready then serve it hot or cold.
