Simply Citrus Cream Cake Recipe

1. Breakstone’s or Knudsen sour cream, divided (1 1/3c)
2. Jell-o Lemon flavor, Instant pudding or pie filling (1package)
3. yellow or white cake mix (1package or 18.25 ounce)
4. mandarin orange segments, drained (1can about 11 ounce)
5. cool whipped topping, thawed (1container about 12 ounce)
6. powdered sugar (1/4c)
7. grated orange peel (2tbsp)
8. water (3/4c)
9. oil (1/4c)
10. eggs (3)
Method of preparation:-
1. First heat the oven to 350 degrees F. Take 2 round cake pans of 9-inch , lightly grease and flour them and keep them aside.
2. Take a large bowl, add eggs, 1 cup of sour cream, dry pudding mix, cake mix, orange peel, water and oil in it. Beat this mixture with an electric mixer for about 1 minute on low speed.
3. Then scrape the bowl and again beat for about 2 minutes. Now pour the mixture into the greased round pans. Place the pans in oven and bake them for about 25 to 30 minutes until the wooden pick inserted in the center comes out clean. Then take it out from oven and cool it completely.
4. Take a large bowl, beat the rest of the 1/3 cup of sour cream and powdered sugar in it until it gets well blended. Gradually mix the whipped topping and then keep it aside.
5. Take a serving plate, place 1 of the cake layers in it and spread half of the topping mixture. Place orange segments on top. Then repeat the cake and topping layers. Decorate it with rest of the orange segments. Place the cake in the refrigerator until it gets ready to serve.
