Sour Cream Spice Cake Recipe

1. Cake flour (1 3/4c)
2. vanilla extract (1tsp)
3. eggs, separated (3)
4. packed brown sugar (1 1/2c)
5. butter, softened (1/2c)
6. sour cream (1c)
7. salt (1/2tsp)
8. ground cloves (1tsp)
9. ground cinnamon (1tsp)
10. baking soda (1tsp)
11. ground allspice (1 1/2tsp)
For Frosting:-
1. Vanilla extract (1 1/2tsp)
2. cream of tartar (1/4tsp)
3. egg whites (2)
4. water (1/3c)
5. packed brown sugar (1c)
Method of preparation:-
1. Take a large mixing bowl, beat butter and brown sugar in it and then add egg yolks and vanilla in it. Beat this mixture well.
2. Take another bowl, mix dry ingredients in it and then add into the creamed mixture alternately with sour cream. Take a small mixing bowl, beat eggs white in it and slowly add it into the batter.
3. Take 2 round baking pans of 9-inch, grease and flour them. Pour the batter in these pans. Place the pans in oven and bake for 25 to 30 minutes at 350 degrees F.
4. Bake the cakes until the wooden pick inserted in the center comes out clean. Then take out the pans from oven and keep them to cool for about 10 minutes and then place them on wire rack.
5. For Frosting; take a heavy saucepan, add water and brown sugar in it and keep it to boil for about 3 to 4 minutes.
6. Take a mixing bowl, beat cream of tartar and egg whites in it until the mixture becomes foamy. Then add this foamy mixture into the sugar mixture and beat it for about 7 minutes on high speed until the peaks get formed.
7. Add vanilla in it and beat it for about 2 minutes until the frosting reaches to the desired consistency. Spread the frosting between the layers, over the top and sides of the cake. Now the cake is ready to serve. Place the leftovers in the refrigerator.
