Spanish Almond Cream (Bienmesabe) Recipe

1. Egg yolks (3)
2. zest from 1 lemon
3. cinnamon (1/2tsp)
4. water (2c)
5. granulated sugar (1 1/2c)
6. almonds, blanched and peeled (2 1/4c)
Method Of Preparation:-
1. Take blanched and peeled almonds place them on baking sheet and toast them under the broiler for about 5 minutes until they get golden brown. Take out the almonds from the oven and then grind them in food processor until they get finely ground.
2. Take a saucepan, place it over medium heat. Pour water in it and keep it to boil. Then add sugar in it and cook it to make syrup. Mix grated lemon peel, cinnamon and ground almonds in it. Turn down the heat to low, cook the mixture for about 5 minutes by stirring regularly until the mixture gets thicken.
3. Take off the pan from heat and keep it to cool. When the mixture gets cooled, beat egg yolks in a bowl and then add into the pan. Mix it by stirring regularly.
4. Again place the pan over medium heat and cook it until it gets boil. Then take off the pan from heat and keep it to cool. Now place it in the refrigerator until it is ready to serve.
