Spanish Coconut Muffins Recipe

Ingredients
1. Grated coconut (1c)
2. flour (1 1/2c)
3. melted butter (4tbsp)
4. eggs (2)
5. grated orange rind (1tsp)
6. sugar (1/2c)
7. soda (1/2tsp)
8. baking powder (11/2tsp)
9. buttermilk (2/3c)
10. white wine (1/4c)
11. vanilla (1tsp)
12. chopped almonds

Method of preparation:-
1. Take a bowl, sieve flour, soda, baking powder and sugar in it. Mix all the ingredients well and then add grated orange rind and coconut in it.

2. Take a separate bowl, beat egg, with vanilla, white wine, melted butter and buttermilk in it. Swiftly mix the flour mixture in it and then blend both the mixtures lightly.

3. Take muffin tins, grease them and then pour the blended mixture in these muffin tins. Then sprinkle the chopped almonds on the top of each muffin tins.

4. Place the tins in oven and bake them for about 15 to 20 minutes at 400 degrees F. When the coconut muffin gets baked then take out the tins from oven and keep them to cool. Then remove the tins and keep the muffins to cool completely. Now the coconut muffins are ready to serve.
