Ingredients
1. All purpose flour (2 3/4c)
2. anise extract (1/2tsp)
3. sugar (2c)
4. eggs (3large)
5. grated lemon rind (2tsp)
6. vegetable cooking spray
7. baking powder (1/4tsp)

Method of preparation:-
1. Take a bowl, beat eggs in it for about 5 minutes until they get pale. Slowly mix sugar in it and beat it for 5 minutes more. Then add anise extract and lemon rind in it and beat it properly.

2. Take a small bowl, mix flour and baking powder in it and then add it into the egg mixture. Cover the dough and keep it for at least 3 hours in refrigerator to chill. Then take out the dough from fridge and keep it for about 15 minutes at room temperature.

3. Divide the dough into 3 parts, place one part on floured surface and roll it into ¼” thickness. Take mold, spray it with cooking spray and pace the dough over the mold and then press it.

4. Then invert the mold on baking sheet, lined with parchment paper. Make more cookies in same way. Place them uncovered on cool and dry place for about 1 hour.

5. Place the baking sheet in oven and bake the cookies at 225 degrees F for about 2 ½ hours until they turn yellow in color. Then cool them completely on rack and remove the parchment paper carefully from the cookies.

Makes about 3 cookies
