Sugar Zwieback Recipe

Ingredients
1. All purpose flour (4c)
2. egg (1)
3. warm water (1/4c)
4. active dry yeast (1package)
5. white sugar (2/3c)
6. salt (1/2tsp)
7. honey (1/4c)
8. butter, cut into pieces (4tbsp)
9. milk (1c)
10. freshly grated nutmeg (1/2tsp)

Method of preparation:-

1. Take a small saucepan, heat milk in it until bubbles appear in it. Take off the pan from heat, mix salt, honey and butter in it. Then keep aside the pan to cool.

2. Keep 2 tablespoons of sugar aside. Mix the rest of the sugar into the milk mixture and keep it to cool at room temperature.

3. Take a large bowl, add lukewarm water and yeast in it and keep it aside for about 5 minutes until the yeast gets soften. Then add egg, milk mixture, nutmeg and four cups of flour into the yeast mixture and beat this mixture properly.

4. Knead the dough in a bowl to make it soft. Make 8 balls of this dough about 3-inch in diameter. Then place the balls on greased cookie sheet at distance of 4-inches and then pat them into 4 –inch rounds.

5. Brush the top of rounds with water and then dust sugar over the rounds. Cover the rounds with towel and keep aside for about 1 hour until they get double in size.

6. Heat the oven to 350 degrees F. Place the cookie sheet in oven and bake the rounds for about 30 minutes until they turn to golden brown in color.

7. Take out from oven and keep them to cool on sheet for about 10 to 15 minutes. Then cut each round into 6 ½ inch slices. Then place the slices with cut side down in oven and bake them for about 5 minutes until the slices turn golden from both sides.

8. Turn off the heat and keep the slices in unopened oven for about 45 minutes and then store them in air tight container.
