Velvet Carrot Cake With Walnut Butter Cream Icing Recipe

Ingredients
1. All purpose flour (2 cups)
2. granulated sugar (2 cups)
3. canola oil (1 ½ cup)
4. large eggs (4)
5. ground cinnamon (1 tbsp)
6. walnuts (2 cups)
7. baking soda (2 tsp)
8. baking powder (2 ½ tsp)
9. baby carrots (2 lbs. pulverized in food processor)

For Walnut Butter Cream Icing:-
1. Vanilla (2tsp)
2. salted butter, softened (2 sticks)
3. cream cheese softened (2, 8oz.)
4. whole walnuts (1 cup)
5. confectioners sugar (2 lbs)

Method of preparation:-

1. For Cake; take a bowl, beat eggs and oil in it and then add flour, sugar and spices in it. Mix it well. Add carrots in it and mix it properly and then add walnuts in it. Mix it to form thin batter.

2. Take a baking dish of 9*13-inch and grease it. Pour the batter into the greased dish. Place the dish in oven and bake it for 1 ½ hours at 325 degrees F or until the tooth pick inserted in the center comes out clean. Take it out from oven and ice it, while hot with walnut butter cream

3. For Butter Cream Icing; take a bowl, mix cream cheese, butter and vanilla in it. Beat this mixture until it gets creamed. Gently add sugar in it and beat it until it gets fluffy and then add walnuts in it and mix well.
