Water Chestnuts Cake Recipe

1. Shredded water chestnuts (1c)
2. evaporated milk (1c)
3. water (1c)
4. water chestnut powder or sweet potato flour (2c)
5. lard or shortening (2tbsp)
6. sugar (1c)
7. water (2c)
8. plastic wrap (1sheet about 14” to 15”)
9. baking pan (11”*12”*2”)
10. oil (for greasing)
Method of preparation:-
1. Take a baking pan, line it with plastic wrap and then grease it with oil.
2. Take a bowl; add sweet potato flour or water chestnut powder, evaporated milk and water in it. Mix all these ingredients properly and keep it aside.
3. Take a pan; add shredded water chestnuts, sugar and water in it. Keep it to boil and then slowly add the mixture of sweet potato flour and evaporated milk in it. Cook it by stirring until it gets thickened.
4. Then pour this mixture into the baking pan and then steam it for about 30 minutes over high heat. Keep it to cool. When it gets cool then takes it out and cut it into slices.
5. Then fry the sliced cake in shortening over medium heat until the cake changes its color to slightly golden. When it gets ready then serve it hot.
