Yogurt Cake Yiaourtopita Recipe

1. Flour (3 ½ c)
2. sugar (1level cup)
3. butter (1c)
4. baking soda (1tsp)
5. brandy (1/3c)
6. eggs, separated (4)
7. lemon juice (a few drops)
8. crushed walnuts (1c)
9. grated lemon peel (small amount)
10. Greek yogurt (320 grams)
For Syrup:-
1. Water (1 1/2c)
2. sugar (2c)
3. lemon juice (1tbsp)
4. vanilla essence (1tsp)
Method Of Preparation:-
1. Take a bowl, beat egg whites in it until peaks get form. Take another mixing bowl, beat butter in it and then add sugar in it. Beat this mixture properly. Add egg yolks in it and keep on beating.
2. Mix baking soda in brandy and then add this mixture into the butter mixture with lemon peel. Now add egg whites into the mixture with few drops of lemon juice in it and mix it with metal spoon.
3. Then add yogurt, flour and walnuts in it. Stir this mixture until it gets mixed well. Place the mixture in baking pan and bake it at 325 to 350 degrees F.
4. To Make Syrup; take a saucepan, place it over heat. Mix all the ingredients of syrup in it and mix them properly. Keep this mixture to boil for about 10 minutes until it gets thicken.
5. Then take off the pan from heat and keep it to cool. When the yogurt cake gets baked then take it out from oven and then pours syrup over the hot cake. Keep it aside to cool until the syrup gets absorbed. Now the yogurt cake is ready to serve.
