Cathy’s Amazing Fish Chowder Recipe

1. Cod fish fillets, cut into 1 inch cubes (1 1/2pounds)
2. butter (2tbsp)
3. salt and pepper (to taste)
4. evaporated milk (1can)
5. peeled and diced potatoes (5med.)
6. chopped onion (1large)
7. sliced bacon (1pound)
8. whole milk (1/2c)
Method of preparation:-
1. Take large stock pot, place bacon strips in it and then place it over medium high heat. Cook the bacon until it get crispy and then remove them on paper towel to drain.
2. Drain the grease from the pot, reserving about 1 tablespoon. Set the heat to medium and then fry the onions in the reserved bacon grease for about 5 minutes until get tender. Now add potatoes and fill the pot with enough water to cover them.
3. Keep it to boil and then cook until the potatoes get almost tender for about 5 minutes. Add fish pieces, butter, whole milk, evaporated milk. Keep it to boil and then simmer for 30 minutes over low heat.
4. Season it with salt and pepper according to taste. Pour it in the bowls and add the crumbled bacon pieces on the top.
