Codfish Casserole Recipe

Ingredients
Flour (2tbsp), codfish, cut into 1 inch squares (1), potatoes baked in their shell (3), milk (1c), water, sliced onion (1), butter (3tbsp), pepper (to taste), salt (1tsp).

Method Of Preparation:-
Put codfish in a bowl; add water in it to cover the fish and then keep it for a few hours. Then drain it and put it in fresh water in a pan. Place the pan over high heat and keep it to boil. Turn down the heat and keep it to simmer for about fifteen minutes. Then drain it and keep it aside. Take a frying pan, heat butter in it and then saute onions in it until they become soft but do not change their color. Add flour in it and cook it by stirring for a few minutes. Then slowly pour milk in it and cook it for a few minutes by stirring and then dust pepper and salt in it. Now take off the pan from heat and keep it aside. Take baked potatoes, peel them and then cut them into round slices. Now take a baking dish, grease it lightly with oil and place the potato slices on it. Cover the potato slices with fish and then spread sauce over it. Place the baking dish in oven and bake the fish for about 10 minutes at 375 degrees F. Until the sauce gets bubbly and fish changes to golden color. Now take out fish from oven and serve it warm with rice in a serving dish.
