Creole Fish Stew Recipe

1. Firm white fish, cut into bite size pieces (1 1/2lb)
2. peeled and deveined shrimps (1/2lb)
3. Tabasco or other hot pepper sauce (to taste)
4. vegetable stock or water (3c)
5. tomato juice (1c)
6. chopped tomato (1c)
7. juice of (1lemon)
8. thyme (a pinch)
9. bay leaf (1)
10. chopped green pepper (1)
11. chopped zucchini (2sm)
12. cubed potatoes (2large)
13. chopped celery stalks (3)
14. chopped carrots (2med.)
15. minced and pressed garlic (1clove)
16. chopped onion (1c)
17. vegetable oil or butter (3tbsp)
18. lemon wedges (1/2c)
19. chopped fresh parsley (2)
20. salt and black pepper (to taste)
Method of preparation:-
1. Take a pan; melt butter in it and then saute onions and garlic in it until they get translucent. Add carrots, celery and potatoes. Saute them gently for about 5 minutes.
2. Add green pepper and zucchini and again saute them for about 5 minutes. Now add tomatoes, thyme, bay leaf, tomato juice and stock or water. Keep it to simmer for 15 to 20 minutes until the vegetables get tender.
3. Add hot pepper sauce, salt and black pepper according to taste. Mix lemon juice, fish and shrimps in it. Keep it to simmer for about 5 minutes until the fish gets cooked and flakes it easily with fork.
4. Serve it hot with chopped fresh parsley, lemon wedges and hot pepper sauce. It looks nice with warm corn bread.
