Fish fillets, halibut, cod, sole etc. cut into 2 inch pieces (1 1/2lb), dry white wine (2/3c), clam juice or shellfish stock (8oz), tomato paste (2tsp), fresh chopped tomatoes (1c), chopped fresh parsley (2/3c), chopped garlic (2large cloves), chopped onion (1c), olive oil (6tbsp), dry oregano, Tabasco, thyme, pepper and salt (a touch).
Method Of Preparation:-
Take a heavy large pot, heat olive oil in it. Add chopped onion and garlic and saute them for about 4 minutes. Add parsley and mix them for 2 minutes. Add tomato and tomato paste and then cook it for more 2 minutes. Add the clam juice, fish and dry white wine. Keep it to simmer until the fish gets cooked for about 8 to 10 minutes. Add seasoning and salt to taste. Now place it in the bowls and serve it.
