Sheera Or Semolina Pudding Recipe

1. Semolina or cream of wheat (1c)
2. ghee or clarified butter (1/2c)
3. water (3c)
4. sugar (1/4c)
5. cardamom powder (1tsp)
6. chopped nuts and raisins (1/2tsp)
Method of preparation:-
1. Take a pan, heat ghee in it on medium heat until it gets hot. Add semolina. Stir it well and fry it on low heat for about 7 minutes or until the semolina gets lightly roasted. Keep it aside.
2. Take a vessel, mix sugar, cardamom and water in it. Keep it to boil. Reduce the heat to low and cook it uncovered for about 2 minutes by stirring it periodically.
3. Now add the semolina mixture. Stir it well and keep it to boil and reduce the heat to low and cook it on low heat by stirring it after every minute until the mixture gets dry. Sprinkle the chopped nuts and raisins. Serve it with dollop of ice-cream.
