Biscotti di Prato Recipe

Ingredients
1. All purpose flour (3 3/4c)
2. baking powder (1tsp)
3. almond extract (1/2tsp)
4. vanilla extract (1tsp)
5. whole, blanched almonds, toasted lightly and coarsely chopped (1 2/3c)
6. eggs (2)
7. egg yolks (2)
8. salt (1/4tsp)
9. granulated sugar (2c)
10. for egg wash use egg (1large)
11 water (1tsp)

Method of preparation:-
1. Take an electric mixer. Blend flour, baking powder, salt and sugar in the bowl of mixer.

2. Take a small bowl. Mix whole eggs, yolks, almond extract and vanilla extract. Add this mixture to flour mixture. Beat it until dough is formed and then mix almonds in it.

3. Place the dough on light floured surface and then knead and divide it. Take 2 large buttered and floured baking sheets. Place dough on it and flat these in rectangle shape logs about 3 inches apart on then sheets and then brush the logs with egg wash.

4. Place these sheets in oven and bake for about 35 minutes at 350 degrees F. Take off sheets from oven and cool sheets on wire rack for 10 minutes. Now cut the logs in diagonal shape slices of ¾ inch.

5. Place these slices on baking sheets and bake for 5 to 7 minutes at 350 degrees F until they are pale golden. Place biscotti on rack to cool and store them in airtight container.

Makes about 56 biscotti.
