Cherry Hazelnut Biscotti Recipe

Ingredients
All purpose flour (4c), baking powder (2tsp), chopped hazelnuts, toasted (1c), sugar (1 1/3c), grated lemon peel (1tbsp), vegetable oil (1/2c), vanilla (1tsp), lemon juice (1tbsp), dried cranberries or cherries (1c), salt 1/2tsp) and eggs (4).
Method of preparation:-
Take a bowl. Mix flour, baking powder, toasted hazelnuts and grated lemon peel in it. Take another bowl, mix eggs, lemon juice, vegetable oil, sugar and vanilla in it. Add the mixture of dry ingredients in it and mix it well and then add cherries. Mix it thoroughly to form dough. Now divide the dough in half. Take a baking sheet and line it with parchment paper. Place half of dough on this sheet and shape each into rectangle. Place the sheet in oven and bake it for 30 to 35 minutes until gets lightly brown. Take off biscotti from oven and place on wire rack for cooling. Cool it for 5 minutes. Now set the temperature of the oven to 300 degrees’. Place the biscotti on cutting board and cut into diagonal slices with serrated knife. Place the slices on lined baking sheet with cut side down. Bake for 30 to 35 minutes until get firm to touch. Turn the sides of biscotti after 15 minutes during baking. Take off sheet from oven. Cool the biscotti and store in air tight container.
Make about 30 biscotti.
