Crystallized Ginger Biscotti Recipe

1. All purpose flour (1 ½ c.)
2. baking powder (1 tsp.)
3. cinnamon (1/2 tsp.)
4. margarine (1/3 c.)
5. finely chopped crystallized ginger (1/4 c.)
6. egg white (1)
7. almond flavor (1/2 tsp.)
8. salt (1 ¼ tsp.)
9. sugar (1/2 c.)
10. Kellogg’s Rice Kris pies Cereal (3 c.)
Method of preparation
1. Take a food processor. Use it to crumb the Kellogg’s Rice Kris pies Cereal. Add flour, baking powder, cinnamon, margarine, salt and sugar in it and again process these ingredients in food processor for about 30 seconds or until it gets coarse meal.
2. Put this mixture in bowl and mix ginger in it. Add egg whites and flavoring in the cereal mixture and almond flavour. Mix properly to make the dough of this mixture.
3. Place half of the dough on floured surface and make rolls of about 8 inches long. Place these rolls on baking sheet and then flatten the rolls in rectangle shape. Now, use remaining half of the dough in the same manner.
4. Place the sheet in oven and bake it for about 25 minutes at 300 degrees F. until it gets golden brown. Now, take off the sheet from oven and place on wire rack for cooling about 10 minutes. Cut each rectangle in diagonal shape about half inch slices.
5. Place these slices on baking sheet with cut side down and bake it for 40 minutes or until it gets crispy. Cool on wire rack. Store the biscotti in an air tight container.
