Fish With Leeks and Green Onion Recipe

1. Sea bass, escolar, haddock or halibuts fillets, orange roughly (4)
2. sliced leek (1large)
3. green onions, halved lengthwise, cut crosswise into 2 inch pieces (10)
4. olive oil (4tbsp)
5. homemade fish stock or bottled clam juice (1c)
6. thinly sliced garlic (4-5 large cloves)
7. Chopped fresh Italian parsley (as desired)
8. salt and pepper (to taste)
Method of preparation:-
1. Take a large saucepan, place it over medium heat. Heat oil of 3 tablespoon in it. Add garlic and leek and saute it for about 3 minutes. Add stock and green onion in it. Keep it to boil for about 8 minutes or until the liquid gets thickens. Add salt and pepper.
2. Take a large frying pan, place it over medium high heat. Heat the left over oil of 2 tablespoon in it. Sprinkle the salt and pepper over the fish and then put it in the pan and cook it for about 5 minutes from each side.
3. Take plates and place fish on it. Heat the onion mixture in the pan and then spread it with leeks over the fish. When the fish gets ready then sprinkle the parsley over it and then serve it.
