Italian Wedding Soup Recipe

1. Chicken breast (2)
2. chicken stock (6 c.)
3. long green onion, chopped (2 bunches)
4. chopped garlic (2 cloves)
5. chopped celery (3 stalks)
6. chopped carrots (3)
7. butter (2 tbsp)
8. fresh ground black pepper (1/2 tsp)
9. fresh spinach, chopped (1/2 pound)
10. fresh parsley (1/4 c.)
11. fresh grated parmesan cheese (1/2 c.)
12. salt (1/4 tsp)
Meatballs:-
1. Ground pork (1pound)
2. finely chopped long green onion (1bunch)
3. chopped parsley (1/4c)
4. pepper (1/4tsp)
5. salt (1/4tsp)
6. bread crumbs (1/2c)
Method of preparation:-
1. Take a large pot or a pan. Put olive oil or butter in it and then saute carrots, onions, garlic and celery in it for about 2 to 3 minutes. Add salt and pepper in it.
2. Reduce the heat and then add chicken stock and chicken breast in it. Take out the chicken from the pot and cut it into pieces and again put to the broth in the pot.
3. Now add parsley and spinach, boil it over low heat for about 30 minutes. Add meatballs and cook it for about 20 minutes.
How to make meatballs:-
1. Take a large bowl. Mix all the ingredients. Make small balls of 1 inch. Serve with Parmesan cheese.
Number of serving- 8 to 10 people
