Pasta Col Ragu Alla Bolognese Recipe

1. Pasta (1to2lbs)
2. butter (1tbsp)
3. extra virgin oil (4tbsp)
4. dry white wine (1c)
5. tomato sauce (1/4c)
6. finely chopped celery (1stalk)
7. finely chopped carrots (1/3c)
8. finely chopped white onions (3/4c)
9. finely chopped non smoked beans (1/4c)
10. ground pork (7oz)
11. extra lean ground beef (1lb)
12. pancetta (200g)
13. salt and pepper (a pinch)
14. broth (1c)
Method of preparation:-
1. Take a pan. Place it over heat. Heat the olive oil and then add vegetables like carrots, onions, beans and celery. Cook them for about 5 minutes or until they begins to soften.
2. Raise the heat to high and then add beef, pancetta and pork in it. Mix it well. After about 5 minutes when the meat has lost most of its red color then add 1 cup of white wine and cook it over high heat by mixing it often.
3. Cook it until the wine gets evaporate and then add tomato sauce, a pinch of salt and pepper. Mix it well.
4. Now lower the heat to simmer, cover the pan and cook it slowly for about 2 1/2hours. Be sure that it does not get dry. If it gets dry then add 1 cup of broth in it. When it gets ready then adds the butter in it.
