Rosemary Biscotti Recipe

Ingredients
1. All purpose flour (3c)
2. baking powder (1tbsp)
3. minced fresh rosemary, divided (1/4c)
4. almond extract (1/4tsp)
5. current dried cherries or cranberries (1/2c)
6. egg (1)
7. granulated sugar (1 1/4c)
8. butter (1/4c)
9. egg white (3)
10. vanilla extract (1/4tsp)
11. salt (to taste)

Method of preparation:-
1. First heat the oven to 350 degrees F. Take a baking sheet, spray it with cooking spray. Take a bowl. Beat butter in it until it gets creamy. And then beat sugar and egg white in it until it gets blended. Blend egg, almond extract and vanilla extract in it.

2. Take a bowl, Mix flour, baking powder and salt in it and then add this mixture in cream mixture. Mix it thoroughly until it gets completely mixed to form dough.

3. Divide the dough in 2 parts and shape each part into log of 12 inches. Now roll each log in rosemary to coat outside.

4. Take a baking sheet. Place logs on it. Brush the sides and the top of the logs with lightly beaten egg white. Place the sheet in oven and bake it for 25 to 30 minutes until it gets lightly brown.

5. Take off the logs from the oven and keep them for cooling for 10 to 15 minutes. Cut these logs into ½ inch slices. Place these slices on baking sheet and bake for about 5 to 7 minutes from each side until it gets lightly brown. Cool them and store in air tight container.
