Spumoni Biscotti Recipe

Ingredients
All purpose flour (2 1/2c), softened butter (1/2c), coarsely chopped, chilled pistachios (1c), drained maraschino cherries, pitted dry (1c), almond extract (1/2tsp), baking powder (1 1/2tsp), vanilla extract (1/2tsp), salt (1/4tsp) and melted chocolate.
Method of preparation:-
Heat the oven to 325 degrees F. Take a baking sheet and lined it parchment paper. Take a bowl, Mix flour, baking powder and salt in it. Take another bowl, mix butter and sugar in it until it gets fluffy. Beat eggs in it one by one and then add extract and flour mixture in it. Add cherries and nuts in it and mix it thoroughly to form dough. Make 2 logs of dough and place on the baking sheet. Place the sheet in oven and bake it for40 minutes until the edges get brown. Take off the sheet from oven and place the logs for cooling. Reduce the temperature of the oven to 250 degrees F. cut the logs with serrated knife into ½ inch thick in diagonal slices. Place a baking sheet and bake for 15 to 20 minutes until the edges of biscotti gets golden and completely dry. Cool it on rack. Dip half of each biscotti in melted chocolate. Keep it to cool and then store in air tight container.
