Bizcochitos (Mexican Christmas Cookies) Recipe

1. All purpose flour (3c)
2. cinnamon (1tbsp)
3. egg (1large)
4. sugar (2/3c+2tbsp)
5. lard or shortening (1c)
6. baking powder (1 1/2tsp)
7. orange juice (1/4c)
8. anise seed (1tsp)
9. salt (1/2tsp)
Method of preparation:-
1. Take a bowl, add lard, anise seeds and sugar of 2/3c in it. Beat them on high speed with a mixer until the mixture gets fluffy. Beat the egg in it and then mix the orange juice in it on medium speed. Now add salt, baking powder and flour in it. Mix them well to make a dough.
2. Take a plate, mix cinnamon with 2 tablespoon of sugar. Keep it aside. Divide the dough in two portions. Then roll one portion of dough on floured surface about ΒΌ inches thick. Cut it into different shapes with a cutter.
3. Dip each cookie in sugar; press it lightly so that the sugar gets stick on the top of cookie. Place the cookies on the baking sheets with sugar side up about half inch apart.
4. Place the sheets in oven and bake cookies for about 10 minutes at 325 degrees F. Take out the sheet from the oven and place the cookies on rack to cool.
