Chocolate Mexican Wedding Cookies Recipe

1. All purpose flour (1 3/4c)
2. confectioner sugar (1/2c)
3. vanilla extract (2tsp)
4. German sweet chocolate, grated (1/4c)
5. ground cinnamon (3/4tsp)
6. softened butter (1c)
7. salt (a pinch)
8. ground pecans (1c)
9. confectioner sugar (1/3c)
Method of preparation:-
1. First heat the oven to 325 degrees F. Take a large bowl, Add 1/3 cup of sugar and butter in the bowl. Mix them until it gets light. Then add the vanilla extract in the bowl.
2. Take another bowl, mix flour, ground chocolate of 1/2 cup, salt, ground pecans and cinnamon in it. Mix all these ingredients well. Now add mixture of dry ingredients to the wet mixture. Make the dough of this mixture.
3. Take a plastic wrapper, wrap the dough in it. Place it in the refrigerator for 1 to 2 hours or until it gets soft. Make the small balls of this dough.
4. Take a baking sheet; place the balls of dough on the sheet about the distance of 1 inch. Place the sheet in preheated oven. Bake it for about 15 minutes until the cookies get firm. Keep it to cool for 1 minute and then place it on rack.
For Coating:-
1. Take a shallow bowl, mix ground cocoa of ¼ cup and confectioner sugar of ½ cup in it. Now roll the lightly warm cookies in the coating mixture to coat them.
